Week 3 - Cauliflower Cheese

This week I made cauliflower cheese as I absolutely love cheese. I decided to serve it with fish, buttered new potatoes and carrots. It was delicious.

1 head of cauliflower
40g butter
40g plain flour
400ml milk
1 heaped tsp mustard powder
70g mature cheddar (grated, plus extra for sprinkling)
A sprinkle of salt, pepper and nutmeg

1. Heat the oven to 190C/170C Fan/Gas 5.

2. Remove the leaves from the cauliflower and break the cauliflower into florets. Then steam for 7-8 mins, until the cauliflower is almost tender, but still fairly firm.

3. To make the sauce, melt the butter in a small saucepan and stir in the flour. Cook over a gentle heat for 1 minute continuing to stir. Remove the pan from the heat and gradually add the milk, a little at a time, stirring after adding. Return the pan to a medium heat and bring the mixture to the boil, stirring constantly until thickened. Simmer for 2 minutes, then remove from the heat. Stir in the mustard, salt, pepper, nutmeg and cheese and set aside.

4. Space the cauliflower evenly in an ovenproof baking dish. Carefully pour over the sauce, ensuring the cauliflower is completely covered. Bake for 25–30 minutes, until the top is golden brown and bubbling.
